16 mini red or yellow peppers
2 large eggs
4 oz goat cheese
3 TBS parmesan cheese
olive oil spray (about 1 tsp)
1 large slice onion
I like jalapeno peppers and sometimes replace 3 mini peppers with 3 small jalapenos.
Cut off the stems and remove pepper seeds. Cook peppers on a grill (about 10 minutes) until they begin to soften. Remove from grill and let cool until you can handle them.
Combine 2 eggs and cheeses beating with a fork. Fill the peppers with a teaspoon of the cheese mixture and arrange in a oven-proof dish. Top with onion slices and salsa.
Place in oven and cook about 20 minutes. I serve 3 peppers on a bed of romaine.
