Introduction

As the slow cooker is large I use a smaller casserole dish inside the slow cooker, heat the dish in microwave and then add all ingredients as per above.

Ingredients

    Ingredients:

    Pork, fresh, composite of trimmed retail cuts (leg, loin, shoulder, and spareribs), separable lean and fat, 200 grams(remove)
    Sweet potato, 2 sweetpotato, 5" long(remove)
    *Organic All-Purpose White Flour, .12 cup(remove)
    Brown Sugar, 3 tsp packed(remove)
    Garlic, 3 clove(remove)
    Ginger Root, 3 tsp(remove)
    *Soy Sauce, 1 tbsp(remove)
    Lime Juice, .12 cup(remove)
    Coconut Milk - Maggi Powder - 1/2C pdr = 50 grams, 75 gram(remove)
    Water, tap, .75 cup (8 fl oz)(remove)
    *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2"(remove)
    White Rice, long grain, .5 cup(remove)

Tips

replace lime juice with lemon, or vinegar or chinese wine.


Directions

Cut pork into 2cm cubes, toss in flour,
Peel and cut sweet potato into 2cm cubes
make 1 c cocunut cream using .75 c powder and add water to make one cup
Mix Brown sugar, garlic,minced ginger, soy sauce, lime juice and coconut cream, and pour into dish for slow cooker. Add pork and sweet potato cubes.
Slow cook for 8 hours on low or 4 to 4.5 on high.
Just before serving add finely sliced red pepper.
Cook rice and add chopped coriander or mint, serve with pork meal.

Serving Size: Serves two, increase recipe for extra persons.
