Chicken & Shrimp Fried Rice

Number of Servings: 20

Ingredients

    1 Cup Extra Virgin Olive Oil
    6 Cups Brown Rice (Cooked)
    2 Lbs Shrimp (Peeled) (You can warm it up in the microwave in a bowl of water and then peel)
    2 Lbs Diced Grilled Chicken
    12 Eggs
    2 Cups Mushrooms (Chopped)

Directions

Pour the oil on the griddle then pour the rice, chicken, & shrimp. Turn it up to about 300 and stir occasionally for about a half hour. Then add the mushrooms and eggs and mix them in. Stir occasionally for about another half hour and serve.

Serving Size: Makes About 20 Cups
