Shrimp Soft Tacos

Introduction

This is based on the Sparkpeople meal plan Lime Shrimp, Tomato, Bell Pepper and Cheese Wrap. This is based on the Sparkpeople meal plan Lime Shrimp, Tomato, Bell Pepper and Cheese Wrap.
Number of Servings: 4

Ingredients

    2 tsp sunflower oil
    1 medium onion, diced
    1 lb shelled raw shrimp, chopped
    2 medium green or yellow bell peppers, diced
    1/8 tsp ground black pepper
    1/4 tsp ground coriander
    1 lime, juice of
    2 medium tomatoes, diced
    4 oz grated colby cheese
    4 6" flour tortillas

    (optional addition: 1 Tblsp sour cream per serving is not included in nutrition information)

Tips

If you want more carbs, split your portion of the filling between 2 flour tortillas.


Directions

Cut veggies and grate cheese. Heat oil in skillet. Add onions and shrimp to hot oil to cook for 2 minutes. Add bell pepper, black pepper, coriander and lime juice. Cook until shrimp is done.

Put 1/4 of shrimp mixture on each of 4 flout tortillas. Top each with 1/2 tomato, chopped and 1 oz of grated colby. Fold tortilla in half and eat like a soft taco.

May also add a Tblsp of sour cream which should be added to your food list.
