Ingredients

•2 cups cooked quinoa
•1/2 cup chopped, canned pickled beets
•1/2 cup chopped cucumber
•2 green onions, chopped
•1/4 cup feta cheese crumbles
•1 Tbsp olive oil
•1 tsp red wine vinegar
•1/4 tsp salt

Directions
1. In a large bowl, toss together the quinoa, beets, cucumber, feta, and green onion.
