Introduction

This is a wonderfully refreshing quinoa salad with feta cheese, pickled beets, and fresh cucumber. It goes great with a simple dish of grilled chicken or fish, and the leftover quinoa salad makes a fantastic lunch for the next day. Ingredients

    2 cups cooked quinoa
    1/2 cup chopped, canned pickled beets
    1/2 cup chopped cucumber
    2 green onions, chopped
    1/4 cup feta cheese crumbles
    1 Tbsp olive oil
    1 tsp red wine vinegar
    1/4 tsp salt

Directions

1. In a large bowl, toss together the quinoa, beets, cucumber, feta, and green onion.

2. In a small, seperate dish, whisk together the olive oil, red wine vinegar, and salt. Pour the dressing over the quinoa salad, and toss to combine.
