Introduction

We decided to mix up the usual quick and easy fingerling potatoes Patch makes by adding parsnips to the mix, and it is worth sharing. I don't think we'll ever make these without parsnips again. SO GOOD! We decided to mix up the usual quick and easy fingerling potatoes Patch makes by adding parsnips to the mix, and it is worth sharing. Number of Servings: 4

Ingredients

    *Soup, LIPTON, RECIPE SECRETS ONION, Mix, Dry, 1 packet
    *Mountain King Fingerling Potatoe, 4 serving
    Parsnips, 3 parsnip (9" long)
    EVOO 1 tablespoon

Tips

you can make these on the grill by putting them in tin foil and if you're not allergic to them like me, carrots are also a good addition to this side dish. But parsnips are a bit like a cross between a carrot and a potato, so I love using them when I can't use carrots.


Directions

cut parsnips approximately same size as potatoes, toss in 1 tablespoon EVOO coating well, lay on cookie sheet and sprinkle 1/2 packet of onion soup mix over, filp them over and sprinkle the other 1/2 over them. Bake at 350 for 25 minutes or until tender.

Serving Size: makes 4 to 6 1 cup servings
