Ingredients

1 green pepper sliced
1/2 cup onion sliced
1 cup of nonfat commercial salsa
2 cups of canned black beans ( no salt added)
1 cup of frozen corn kernels
1 tsp. cumin
1 tsp. cilantro
6 nonfat corn tortillas (6" round)
Directions
saute pepper and onion in a skillet with 2 tablespoons of salsa until tender. stir in the beans, corn and seasonings. when all is heated through paint each tortilla with salsa and spoon 1/4 cup of the mixture in the middle and roll up. bake for 15 minutes at 375.
