I used to eat Bread Pudding when I was growing up, and now that I'm on a Healthy Lifestyle, I realized it was a treat that I had not had in many years. I tried it as a dessert for company recently, and it went over big! Ingredients

1/3 cup brown sugar
1/2 cup raisins
1 egg
2-1/4 cups nonfat milk
1 tsp. vanilla
2 tsp. cinnamon
2 cups bread, pulled into small cubes
Tips
I serve with a couple of cut up, fresh strawberries on the top, and a dollop of Lite Cool-Whip (not figured in the caloric calculation).
I have substituted dried cranberries for the raisins, and that is delicious also.
Directions
Preheat oven to 350F Use a round or square glass dish for baking.
Combine egg, milk, vanilla and cinnamon in blender. Just give it a couple of seconds to blend well.
Pour this over the bread cubes, sprinkle with raisins. I like to sprinkle a bit of cinnamon over the top before baking.
Place your baking dish in a pan of water in the oven, keeping the water about 1-inch deep in the outside pan.
Bake for 40-45 minutes or until set and not runny.
Serving Size: Makes 6 1-cup servings
