Half Healthy Scramble

Ingredients

    2 eggs
    6 tbl egg whites
    20 tater tots
    1 cup sliced mushrooms
    1/2 cup chopped green pepper
    1/4 cup chopped onion
    10 turkey sausage links
    1/2 cup shredded part skim shredded cheese

Directions

In a large skillet spray non stick spray and begin cooking the tots, smashing them as they cook. Add the green pepper, onion, mushrooms, and sausage. Cook and stir for 5 minutes. Meanwhile, beat the eggs and egg whites together and pour into the skillet. Cook until set, remove from heat and cover with cheese.

Serving Size: Makes 2 large servings
