4 to 6 whole eggs
1/2 to 3/4 c. lowfat cottage cheese
Herbs, onion or peppers to taste
Add pepper or other herbs or minced browned onion before cooking.
Heat on low heat until completely baked on stove top.
Top with shredded cheese if desired.
Serves three to four hearty appetites.
I sometimes steam 1 cup of green peppers or mushrooms for variety prior to adding the egg/cheese mixture.
