Introduction

Ingredients

    *Canola Oil, .25 cup
    *Whole Wheat Flour, 0.25 cup
    chicken breast , whole (Approx 8 oz), 2 serving
    Diced Tomatoes with Zesty Green Chiles (Del Monte 14.5 oz can), 1.75 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Lea & Perrins, Worcestershire Sauce, 2 tsp
    Green pepper (1 medium, whole), 1 serving
    Seasonings to taste

Directions

Put 1/4 cup flour in 1/4 cup oil, stir for 5 minutes until flour is cooked on high.
Reduce to low and add green pepper and onion, cook for 15 minutes or until soft.
Add Cooked Chicken, and remainder of ingredients. Simmer until sauce thikens a bit.

Serving Size: 1 cup serving size

  • I love this allrecipes.com recipe! I make it all the time, in various forms. Sometimes I skip the roux, sometimes I add okra, I'll use fresh tomatoes instead of canned, and I always add lots of parsley, thyme, & cayenne pepper as well as soy sauce and a little sugar or Splenda (in the AR version). - 8/6/13
