Italian Chicken Pasta

Introduction

A delicious dish to use leftover cooked chicken breast--makes the prep time even shorter. A delicious dish to use leftover cooked chicken breast--makes the prep time even shorter.
Number of Servings: 8

Ingredients

    1 lb boneless, skinless chicken breast, cubed
    1 can cream of chicken soup
    8 oz package low-fat cream cheese
    1 cup 1% milk
    1 pkg dry Italian Dressing Mix
    16 oz cooked pasta (your choice)
    **can add steamed veggies if desired as well

Directions

Cook chicken in non-stick skillet until no longer pink. Set aside.
In small saucepan (or microwave) soften cream cheese slightly.
Add the soup and dressing mix, stirring and heating until blended and smooth.
Add milk if needed to thin sauce.
Toss cooked pasta with chicken and sauce (and veggies if desired).
Serve and enjoy.

    Very good & filling! However, the stats seem to be off (I noticed that Sparkpeople says 2oz of pasta is only 74 calories when in reality it is usually about 200). I made it with whole wheat pasta and nonfat milk and my stats were 355 calories, 41 carbs, 8 g fat and 27 g protein - 7/9/07

    I used 98% fat free cream of mushroom soup and fat free cream cheee. Doubled the sauce and added a ton of mushrooms, broccoli, and red peppers. I got 12 hearty 1-1/4 cup servings. The sauce was a little thick, next time I will cut the amount of cream cheese in half. - 7/14/10

    I used 2 tsp. of zesting italian dressing instead of the dry italian dressing mix, and added 1/4 c. each of sauted sweet white onion and green pepper. I also added 1 tsp. of dry red chili peppers. Italian chicken with a kick. - 9/21/08

    This works great in the slow cooker. Just toss everything in, set on low, out the door you go. When you get home, dinner is done and the house smells delicious! Thanks. - 3/9/11

    Yum! I made it with homemade cream of mushroom soup (easy to make a big batch and freeze it for when you need it) and since I didn't have an Italian dressing mix, just used herbs d'provence instead. Added carrots, green beans and peas, and served over No Yolk noodles. A hit! - 7/14/09

    This pasta was great! I used Ronzoni SmartTaste Rotini, low fat, low sodium soup and fat free cream cheese! I refigured the calories that way at 318/serving. Great taste for the count! - 9/21/08

  • I made this for my parents and myself. My mom is an excellent cook, and she is very picky when it comes to new stuff.... She loved it! We all did! I loved how the sauce was sticking to the penne. I added some steamed veggies, which made it look really colorful and yummy.I am sure kids would love it! - 6/24/13

  • My family loves this recipe. I did use skim milk to thin the sauce and it was good and creamy. I also added chopped onion and chopped garlic. I just have to add those to most of my recipes. Thanks for sharing. It was wonderful! - 10/16/12

  • I made this last night and it was fab. Very quick and very tasty. I added some mushrooms & leeks to the chicken while it cooked and threw in loads of steamed veg. Will be making this many times. - 8/16/12

  • This was delicious, but I think the sodium is off on this? The Italian dressing mix has 320mg of sodium just in the one serving, the cream cheese has 200 per 1 oz, so that's over 500 right there. - 4/6/11
