Chicken Apple Sausage Quinoa

Ingredients



    Olive Oil, 3 tbsp (remove)
    Broccoli raab, 1 bunch cooked (remove)
    **Summer Fresh Multi Grain Quinoa Salad, 1 cup (remove)
    *Aidells Chicken & Apple Smoked Chicken Sausage, 4 serving (remove)
    *Almonds Mariani Premium Sliced Almonds (1/4c), 60 gram(s) (remove)
    *Onion Vidalia raw med onion, 148 gram(s) (remove)
    Garlic, 2 cloves (remove)

Directions

broccoli rabe, trim stems, cut into 2" pcs microwave for 2 mins.
bring 2 c water and 1 tbls olive oil to boil in lidded, med-size pot. Stir in quinoa & raisins. Turn down to a simmer and cover. Cook 20 mins or until liquid absorbed.
heat 1 tbls olive oil in large lidded saute pan, med heat. Add sausages and cook 5 to 7 mins, turning to brown all sides. remove sausage to rest.
in same pan, add 1 tbls olive oil. saute onion 3 to 5 mins or until softened. Add garlic & broccoli rabe & saute 3mins. Meanwhile, slice sausage on the bias and to pan along with quinoa mixture, almonds, sale & pepper. stir to combine and cover. Cook 2 mins or until heated through
