Big Dog's Egg and Peanut Putter Breakfast Sandwich

My husband made this sandwich for me when we were dating; so good! I've 'lightened' it up a bit but it's still tastes great and keeps you going all morning long...no stomach growls! Ingredients

    1 Multi-Grain Bread Thin, toasted
    1 tbsp low fat peanut butter
    1 egg, over medium
    canola oil cooking spray

Tips

Bread is best lightly toasted. I like my egg cooked barely medium that way there is lots of yolk to dip the sandwich in! It sounds crazy but it's delicious and stays with you!


Directions

Cook one egg, over medium in a small skillet lightly coated with non-stick canola oil cooking spray.

Lightly toast one multi-grain sandwich thin; skim coat with low-fat peanut butter.

Place cooked egg between prepared peanut butter toasted bread pieces.

Grab some napkins and enjoy with a fresh cup of coffee!

Serving Size: Makes one breakfast sandwich.
