Ingredients

3 cups whole wheat flour
1/2 t salt
1 t baking soda
1/4 c canola oil
1/2 cup brown sugar (not packed)
1 egg
3/4 c freshly grated apple (about 2)
1 c almond or soy milk plus 1 t lemon juice
1 c slivered almonds
1 t cinnamon
1/2 c craisins
Tips
You can get creative: use mixed nuts, use buttermilk instead of almond or soy milk, use a mixture of spices instead of just cinnamon, use raisins or goja berries instead of craisins, add ground flaxseed (increase liquid if you do).
Directions
Preheat oven to 350 F for muffins or 400 F for loaf. Mix everything together. I found it works best to mix with your hands. Fill muffin cups or loaf pan. For muffins, bake 20-25 minutes, and for loaf, bake 1-1/4 hours, letting it cool in the pan.
