Stir Fried Bok Choi & Soba Noodles

Introduction

Easy, low calorie but full of flavor, this inexpensive dish is filling and gentle on the wallet! Easy, low calorie but full of flavor, this inexpensive dish is filling and gentle on the wallet!
Number of Servings: 3

Ingredients

    3 cups bok choi, washed & roughly chopped
    1 tbsp sesame oil
    2 bundles soba noodles, cooked & rinsed
    6 tbsps Teriyaki Sauce
    1 tbsp corn starch
    2 tbsp water
    chinese 5-spice powder
    cumin
    granulated garlic

Directions

Wash & roughly chop bok choi - spin dry in a salad spinner if you have one. Cook soba noodles. Mix all sauce ingredients together, add a small amount of water as needed to blend cornstarch into mixture.

In a large frying pan or wok, heat sesame oil on high heat and add bok choi, stir frying until greens are wilted and ribs are cooked and hot but still crisp. Add sauce mixture and continue stirring until it starts to thicken. Add water if necessary to keep from getting too thick. Add soba noodles, tossing to coat.

Serving Size: makes 3 - 2 cup servings
