Easy Frittata

Introduction

This is a "whatever's in the pantry/fridge" frittata that I like to make for easy, on-the-go breakfasts during the week. Usually it consists of bell peppers, mushrooms, a meat protein of some sort, and some cheese sprinkled on top. Usually it consists of bell peppers, mushrooms, a meat protein of some sort, and some cheese sprinkled on top.

Ingredients

    5-6 large eggs, whisked with a bit of milk
    1 cup of mushrooms, sliced
    2 cups of fresh spinach, chopped
    5-6 slices of bacon
    1/2-1 cup onion, diced
    1/4-1/2 cup shredded cheese (Mexican blend is good)
    1 tbsp oil (grapeseed is what I used.)
    Salt and pepper to taste

Directions

You'll need an oven safe pan. Slice bacon in chunks and cook on stovetop over medium heat. Remove bacon from pan and most/or all of bacon grease. Use either remaining grease or grapeseed oil and add to pan. Add in onions and any other crunchy veggies first. Saute for a minute, then add in softer veggies such as mushrooms and spinach. Add S&P to taste. Saute for another minute or so. Add bacon back in right before adding in egg mixture. Let cook on stovetop on med-low for a few minutes until mostly cooked. You want it to still be pretty wet and loose on top. Then put your oven on broil. Sprinkle cheese on top of frittata and put in the oven for a few minutes. I check mine constantly until the top is a nice golden brown and obviously cooked through.
