Chocolate Mousse

Introduction

Number of Servings: 10

Ingredients

    3.5 cups plain low fat yogurt
    2 pkg of unflavoured gelatine

    3tbsp coffee crystals mixed with
    6 oz of coffee creamer (chocolate mint truffle)
    2 tbsp extract (vanilla or rum)
    4 tbsp melted margarine
    .5 cup cocoa powder
    1 tbsp splenda

    .75 cup of egg whites beaten to frothy peaks

Directions

Add the unflavoured gelatin to the yogurt and make sure it is well mixed, let it rest while you mix other ingredients. In cold bowl, beat eggs until peaks form. Seperate bowl,combine margerine, sugar & cocoa. Blend with mixed creamer, coffee and extract. Add this to the yogurt and gelatine. Finally, fold with the egg whites.

Chill well for 2 hours.

Serving Size: 10 servings of 1/2-cup
