Introduction

This healthier taco salad uses a salt-free taco seasoning, plus plenty of dark leafy greens. This healthier taco salad uses a salt-free taco seasoning, plus plenty of dark leafy greens.
Number of Servings: 4

Ingredients

    8 ounces ground turkey breast
    1 teaspoon Chef Meg's Taco Seasoning
    6 cups romaine lettuce, chopped
    1 cup red kidney beans, rinsed and drained
    1 onion, chopped
    1/2 cup shredded low-fat cheddar cheese
    2 ounces tortilla chips
    1/2 cup salsa

    Optional toppings:
    Greek yogurt
    Diced avocado
    Chopped black olives
    Bell peppers

Tips

Vegetarian? Ditch the turkey and boost the beans.
Don't want chips? Leave them out.
Top with anything you like!


Directions

Brown turkey and add the taco seasoning.
Divide the lettuce, beans, and onion among four large bowls, then top with the turkey and cheese.
Crush the tortilla chips and add to the top of the salads, or serve on the side.
Add salsa, top with additional ingredients as desired (nutrition info not calculated) and enjoy!

    As I read the comments I felt saddened..if you don't like the recipe..please don't bash the poster..!     Tried turkey in it and didn't care for it at all. However, lean hamburger or chicken breast is something that we love in our taco salads. The red kidney beans are awesome in it! Rating based on the turkey part of the recipe. - 6/10/12

    This was great, but I made a few alterations. I used black beans, instead of kidney (which are not my favorite), and sauted the bell peppers and onions. As additional toppings, I had lowfat yogurt, and avocado- yum. I think you could have done without turkey, and it still would have been delish. - 8/21/12

    My mouth is watering! I'll need to use some other beans though - black-eyed sounds good, or navy beans. My stomach can cope with these, but not kidney beans.

    I would like this only personnally its a waste of good turkey, I prefer to eat it in other things. I would enjoy this with ground beef or maybe ground chicken. - 6/10/12

    I made this and liked it, BUT it sure would have been nice to have all the ingredients for the recipe listed in the recipe so it would have been easier to just follow the recipe. Wish she had thought about that so i didn't have to rewrite it. - 6/10/12

  • I have been doing this for years and make my own taco seasoning soI don't get starch and artificial junk in packaged season. I add black beans to the meat. My fam loves it. We also use it for tacos in whole wheat wraps. If too bland add chopped onion & jalapeno pepper or some salsa when cooking it. - 6/22/13

  • This is almost identical to the taco salad I make that everyone asks for. The only difference: I don't use salsa for a dressing, I use fat free catalina dressing, and nobody knows it's fat free. - 6/14/13

  • I rated this good for the concept. I feel like you can sub the ingredients and season as you like, the idea is to eat a more healthy taco salad. there are very lean ground beefs, or bison that you can use. Switch out beans for black or chili beans,
    design this to suit your tastes. - 6/10/13

    Great reminder for my empty nest one person household. Preparation size can be easily modified for one or two. For years, I used this form of recipe (varied the protein as I felt the urge or what type was in the refrigerator/pantry). It is a quick meal that the family loved and nutritious. - 6/10/13

    I think this 7 nights salads recipes is a great idea! Cause it's soo hot out. PPl don't feel like cooking. Like me so I will definitely try some of these recipes out.
