Introduction

Our healthier taco salad uses a salt-free taco seasoning from Chef Meg, plus plenty of dark, leafy greens. Our healthier taco salad uses a salt-free taco seasoning from Chef Meg, plus plenty of dark, leafy greens.
Number of Servings: 4

Ingredients

    8 oz ground turkey
    1 tsp Chef Meg's Taco Seasoning
    6 cups romaine lettuce, chopped
    1 cup red kidney beans, rinsed and drained
    1 onion, chopped
    1/2 cup shredded low-fat cheddar cheese
    2 oz tortilla chips
    1/2 cup salsa

    Optional toppings:
    Greek yogurt
    Diced avocado
    Chopped black olives
    Bell peppers

Tips


Directions

Brown turkey and then add the taco seasoning.
Divide the lettuce, beans, and onion into four large bowls, then top with the turkey and cheese.
Crush the tortilla chips and add to the top of the salads.

Add salsa and enjoy!

  • This was great, but I made a few alterations. I used black beans, instead of kidney (which are not my favorite), and sauted the bell peppers and onions. As additional toppings, I had lowfat yogurt, and avocado- yum. I think you could have done without turkey, and it still would have been delish. - 8/21/12

  • I think this 7 nights salads recipes is a great idea! Cause it's soo hot out. PPl don't feel like cooking. Like me so I will definitely try some of these recipes out.

    To high in Carbs, Carbs release insulin and insulin tells you body to store fat and causes cholesterol problems. Try loading up on the Fats and salt and reduce the carbs then you may have something worth eating. - 6/11/12

    I would like this only personnally its a waste of good turkey, I prefer to eat it in other things. I would enjoy this with ground beef or maybe ground chicken. - 6/10/12

  • I made this and liked it, BUT it sure would have been nice to have all the ingredients for the recipe listed in the recipe so it would have been easier to just follow the recipe. Wish she had thought about that so i didn't have to rewrite it. - 6/10/12

    Tried turkey in this recipe and we basically wasted all of the ingredients as we tossed it out and ended up having some sandwiches for dinner instead. I'll stick to lean hamburger in our taco salads. - 6/10/12
