Ingredients

Chop/dice 1/4 cup of bell pepper and 1/4 cup onions. Saute over medium heat until onions are clear or both are lightly browned (use Pam to prevent sticking.) While sauteing pepper and onion, whisk 2 fresh eggs and 1 egg white and milk until well mixed and creamy. when pepper mix is ready add egg mix and stir occasionally until eggs are firm. Sprinkle cheese over mixture and add 2 tbsp water to pan, cover and let steam. When cheese is melted, egg mixture should be fluffy and ready to serve.
