Black Bean and Rice Skillet

Number of Servings: 4

Ingredients

    1 medium onion, chopped
    1 small red pepper, chopped
    2 cups cooked black beans
    1.5 cups chicken broth ( low sodium)
    1/2 cup uncooked brown rice
    1/4 tsp. crushed hot chilies
    1/4 tsp. dried thyme
    2 cloves garlic (minced)
    1 bay leaf

    1/2 cup shredded cheese optional (not included in nutritional info)

Directions

In a frypan, saute in 1 TBS. olive oil until soft the onion and pepper. Add and bring to a boil the remaining ingredients. Reduce heat and simmer covered until rice is done; about 40 minutes. Sprinkle cheese on top if desired.
