Chicken Canellini Bean Chili

Ingredients

1 packet Ground Chicken Breast
12 oz Low Sodium Tomato Juice
1 can Cannelini Beans
1/2 tsp Cayenne Pepper
1 tsp GARLIC POWDER
1 tbsp Chili powder
1 tbsp Black Pepper
1 tbsp Honey
1 tbsp Olive Oil
1/2 tsp Apple Cider Vinegar
.5 tsp Sea Salt
3 Garlic cloves coarsely chopped
1 medium Onions, chopped
1/2 Green Peppers, chopped
Tips
One thing I did was to just part of the dry seasonings on the chicken and added the rest once the chicken was in the stock pot with the beans and tomato juice.
Top with your favorite chili toppings. Note: these will change your nutritional values.
Directions
1. In a skillet sautee 2 garlic cloves and half of the chopped onion in olive oil.
2. Add ground chicken.
3. Add seasonings to chicken garlic powder, chili powder, cayenne pepper, black pepper, salt.
4. Once chicken is seasoned and browned, transfer into a stock pot.
5. Add beans, tomato juice, honey, vinegar, remaining garlic clove, remaining chopped onions, and green peppers.
6. Simmer for about 15-20 mins.
