Homemade Shepherd's Pie

Introduction

Ground turkey and homemade gravy makes it as light as you want it to be. All the ingredients can be adjusted toYour own preferences. Ingredients

    20 oz. pkg. Jennie O ground turkey
    8 oz pkg. mushrooms
    1 medium onion
    1 l6 oz pkg frozen vegetables (corn, carrots, green beans)
    8 T Smart Balance
    4 T flour
    1 can Swanson chicken broth
    1 cup milk
    2 lb. Yukon gold potatoes, in skin
    2 T canola oil
    salt, to taste
    pepper, to taste
    garlic powder to taste

Tips

I bake this in the skillet I cook the ground turkey in. Make sure your skillet is oven-proof. I don't know the size of the servings, but if you get 8 equal-sized portions, the calorie count will be accurate.

Directions

Season ground turkey to taste with salt, pepper, and garlic powder. Brown ground turkey in canola oil. Set aside. Cook onions and mushrooms in 2 T butter until soft. Add to ground turkey. Microwave frozen vegetables till nearly done. Drain and add to ground turkey mixture.

Melt 4 T butter in saucepan. Sprinkle in 4 T flour and cook till flour is bubbly. Season with salt, pepper, and garlic powder to taste. Add chicken broth and milk all at once and cook over medium heat till bubbly and thickened. Add to ground turkey mixture.

Boil potatoes till soft. Drain and mash. Season with salt, pepper, garlic powder and 1 T Smart Balance. Thin with milk to a spreadable consistency. Spread over ground turkey mixture and dot with 1 T Smart Balance.

Bake in a 400 degree preheated oven for 20 minutes, then broil until lightly brown.
