Introduction

Ingredients

    1oz cooked soyrizo
    1/4cup TraderJoes Vegetarian Salsa Style Lowfat beans
    2 medium corn tortillas
    1 spritz Spray Canola Oil
    2 cups shredded Romaine Lettuce
    1/4 cup each of chopped carrots, cauliflower, broccoli and red cabbage
    5 grape tomatoes halved
    1oz Paul Newmans Olive Oil Vinegar dressing

Directions

Pre-heat oven to 375. Quarter tortillas and spread on baking sheet and spray with canola oil, sprinkle with sea salt if desired. Toast for 15mins until crispy. Mix beans and soyrizo in microwave safe dish and heat for 1 minute in microwave. Mix salad ingredients and toss with dressing. Place heated bean mixture in center of plate, surround with tortilla chips, cover with salad.
