For every 1/2 cup of peanut butter you use, add the following:
1/3 C. tamari (or soy sauce)
3 T. Chinese rice wine (or you can use cooking sherry)
1 1/2 T. rice vinegar (or you can use regular vinegar)
1 T. packed brown sugar
3 minced garlic cloves
1 t. minced ginger
1/2 t. crushed red pepper flakes
I usually find that I have to add water because the sauce is too thick. I use the natural peanut butter because the other kind already has sugar added.
I like this sauce over spaghetti noodles. Just put a little sesame oil on the noodles, add sauce. It's good warm or cold. It's an easy one to pack for lunch.
I also use this recipe for Thai noodles. I soak udon noodles, dice some tofu and fry it with a little tamari. Throw some red pepper strips in the wok and fry. Throw some pea pods in with the noodles just before you are done soaking them. Toss this all together and then add peanut sauce and a big handful of chopped cilantro.
