Dijon Crusted Chicken Breast

Ingredients

    1/2 c crushed corn flakes
    1 tsp chopped dried rosemary
    1/2 tsp garlic salt
    2 Tbsp dijon mustard
    1 tsp lite soy sauce
    1 tsp fresh ground pepper
    2 boneless, skinless chicken breasts

Tips

To make a little crispier pat chicken breasts dry before brushing on mustard sauce.

Serve with your favorite steamed veggies & a warmed loaf of hearty whole grain bread (or cornmeal muffins for gluten-free meal)

Directions

Pre heat oven to 450

Crush 1/2c Corn flakes; mix together in a shallow dish the corn flakes, chopped rosemary & garlic salt. In a small sauce dish mix together Dijon mustard, pepper & soy sauce.

Brush mustard sauce on to top of chicken breasts then dip in corn flake mix, making sure to roll up on sides. Place in foil lined baking dish and bake for 25 min, or until internal temp reaches 170.
