Buttermilk pancakes

Number of Servings: 6

Ingredients

    1 1/2 cups flour
    3 tsp. baking powder
    1/2 tsp. salt
    1 Tbs. sugar
    1 extra large egg
    2 Tbs. canola oil
    1 cup lowfat buttermilk
    1/2 cup nonfat milk

Directions

Mix dry ingredients. Make a well in the middle and add egg, oil and milk. Wisk together until smooth. Add a little more nonfat milk if batter needs thinning (you can use all nonfat milk which makes a thinner batter than using buttermilk).

Pour on a lightly greased skillet.

Makes approximately 6 pancakes.
