I left out the sesame oil and replaced the maple syrup with agave and the tuna with Alaskan cod.
7 ounces tuna or yellowtail, cut into 1-inch chunks
1/4 cup nama shoyu or wheat-free tamari (gluten-free soy sauce)
1 t agave
1-inch piece of fresh ginger, sliced thinly
Fish is even better and more tender if you marinade overnight, but will be good as long as you marinade for at least 2 hours.
To save dishes and time, put sauce ingredients in a ziploc baggie, and squish together. Add fish and squish around until all fish is coated.
2. Cut fish into 1-inch chunks; marinade in sauce.
3. Thread onto 2 skewers once marinaded.
4. Turn broiler to high. When it is heated, place skewers under it and cook for 1 to 2 minutes.
5. Turn and cook for 1 to 2 more minutes, then set aside.
Serving Size: Makes 2 servings of 1 3-3.5 oz fish skewers.
