Savoury Yellow Peas

Introduction

I thought this would be a good side dish or a vegetarian/vegan dish if you omit the chicken (chicken not included in recipe calculator so you will have to add it iseperately f including it in your recipe). This recipe was taken from McKenzie's Yellow Split Peas packet. Number of Servings: 8

Ingredients

    500g Yellow split peas
    1 tbsp olive oil
    1 cup green capsicum, chopped
    1 cup onion, chopped
    1 cup celery, chopped
    1 Tbsp sugar
    1 bay leaf
    1 can 400g tomatoes, diced
    2 cooked skinless chicken fillets, sliced (optional)
    Ground pepper to taste

Tips

Try this recipe with 500g of lean diced ham or Tofu if you are vegetarian.


Directions

Prepare Yellow Split Peas as instructed on pack and fully drain.
In a large fry pan heat oil over a medium heat. Saute the capsicum, onion and celery.
Add the sugar, bay leaf, tomatoes, prepared yellow split peas and season with pepper to taste.
Reduce heat and simmer for 15 minutes stirring occasionally.
Remove from heat and pour into a large bowl.
Remove bay leaf and add cooked chicken (if using)

Serving Size: Makes approx 8 serves
