Introduction

5 beans and pasta for a satisfying cold entree 5 beans and pasta for a satisfying cold entree
Number of Servings: 8

Ingredients

    1/3 C red wine vinegar
    1/4 C balsamic vinegar
    1/4 C extra virgin olive oil
    1/4 C scallions, sliced
    3/4 C red onion, finely diced
    1/2 C red bell pepper, diced
    3 Tbs honey
    12 ounce can each, drained and rinsed:
    white beans
    black beans
    chick peas
    pinto beans
    1 pound ditalini pasta, cooked & drained
    salt & pepper

Tips

cooking time refers to chilling


Directions

whisk vinegars, oil, honey, salt & pepper into a dressing.
Add everything else and mix to coat with dressing.
Refrigerate 2 hours. Mix before serving.

Serving Size: makes 8 huge entree portions
