Baked Mushroom Chicken

Number of Servings: 3

Ingredients

    3 boneless skinless chicken breasts
    1 can cream of mushroom soup, 98% Fat Free
    1 cup sweet onion (sliced)
    1 cup red pepper (sliced)
    2 tsp crushed red pepper flakes(optional)
    2 tbsp french fried onions
    1 cup whole button mushrooms

Directions

Preheat oven to 350 degrees.
Place chicken in baking dish.
Spoon cream of mushroom soup on top of chicken.
Add onion, red pepper & mushrooms to baking dish.
Sprinkle crushed red pepper on top (watch out they are spicy!!!).
Cook in oven 35 minutes (45 - 50 minutes if frozen). Sprinkle french fried onions on top during last 5 minutes of cooking.
ENJOY!!!

    I made this for dinner tonight for my mom and i, we loved it. I made some changes though. I added broccoli instead of the red peppers, no pepper flakes, some chicken stock and some cheese. It was really good this way and very filling. - 5/6/08

    I was a little disappointed in the flavor, but it was easy , affordable and quick. I ended up adding some Parmesan, black pepper and garlic salt to jazz it up a bit. I also omitted the french fried onions. Thanks! - 9/1/08

    This recipe was delicious. The chicken was a little bland. I think we could fix that by seasoning the chicken and cut into smaller pieces to soak up the flavors. We omitted the french fried onions and substituted button mushrooms for fresh mushrooms to enhance the flavour. - 5/6/09

    Very good - easy to make and the fiance and I both liked it. Really loved how many vegetables were included in the dish! Didn't have to make a separate side of veggies. Next time I think I'll try adding some more spices to it - maybe some onion powder or something. - 10/20/08

    My husband loved too! He wants to spice it up alittle next time. Maybe sprinkle the crushed red peppers directly on the chicken before the soup! - 4/14/08

    I loved this as it was. My husband thought the chicken itself was a little bland. Next time, I might try adding some extra seasonings, and also cutting the chicken in to pieces before baking so that the chicken is more saturated with the sauce. - 4/13/09

  • This was pretty good. I agree that the dish was a little bland. Recommend salt, pepper, and other spices be added to the chicken before cooking. I'd make it again but with some small changes for flavor. - 4/10/08
