Introduction

Number of Servings: 4

Ingredients

    350g/12oz/1.5cups basmati rice
    225g/8oz smoked fish of your choice
    4 eggs
    25g/1oz/2 tbsp butter
    30ml/2tbsp garam masala
    ground black pepper

Tips

It is great for breakfast, lunch or Dinner.


Directions

Cook smoked fish if needed seperately.

Place the eggs in a pan of cold water and bring to the boil. Cook for 6-7 minutes.

While eggs are cooking cook the rice in a pan of boiling water for 10-12 minutes.

When the eggs are cooked, drain and place under cold running water until cool enough to handle. Shell the eggs and cut into halves or quarters.

Using a fork, ease the flesh of the smoked fish apart so that it seperates into large flakes. Romove any bones.

Drain the rice and tip it into a bowl. Melt the butter in a pan, stir in the garam masala and add the fish. When it has warmed through, add it to the rice with the smoked fish and eggs. Mix gently, taking care not to mash the eggs. Season and serve immediately.
