Glazed Raspberry-Ginger Chicken

Ingredients

    Glaze
    1/2 C Raspberry All Fruit
    2 to 3 Tbls cider vinegar
    1 tsp peeled grated gingerroot or 1/4 tsp ground
    1/8 to 1/4 tsp crushed red pepper flakes
    1/4 tsp salt

    4 Boneless, skinless chicken breats (about 4 ozs each)
    1 pound sweet potatoes, peeled and cut crosswise into 1/2 inch slices
    2 tsp sugar
    1/8 tsp ground cinnamon

Directions

Whisk together claze ingredients.

Lightly spray a large nonstick skillet with vetetable oil spray. Heat over medium-high heat. Add chicken and reduce heat to medium. Cook for 6 minutes. Turn chicken and top each piece with 1 tablespoon glaze(some will remain). Cook for 7 minutes, or until no longer pink in center. Transfer to a plate.

Meanwhile, steam potato slices for 10 to 12 minutes, or until tender. Arrange on a serving plate and cover with aluminum foil to keep warm.

Add remaining glaze to skillet. Bring to boil over high heat. Boil for 2 minutes, or until the mixture begins to thicken slightly, scraping the skillet frequently.

Return chichen to skillet and cook for about 2 minutes, or until richly glazed and beginning to darken intensely, turning constantly with a fork and spoon. Arrange chicken on the plate with the potatoes.

In a small bowl, stir sugar and cinnamon and sprinkle over potatoes.

Serving Size: serves 4 3 oz chicken and 3/4 cup sweet potates per servings
