Chicken Crusted with Almond and Flax

Ingredients

    2 (4 oz.) boneless chicken breasts
    2 tsp. almond crushed/diced
    3/8 cup (1/4 cup & 2 Tbsp.) ground flax meal
    1/2 tsp. salt
    1 Tbsp. olive oil
    1/2 tsp. lemon juice
    2 eggs
    1 cloves garlic, minced
    1/8 tsp. paprika
    1/2 tsp. dried parsley
    1/2 tsp. dried thyme
    1/2 tsp. dried basil
    1/2 tsp. dried oregano

Directions

Preheat oven to 350 degrees.

Combine almond and flax meal and salt in small bowl and stir to mix uniformly. Add dry mixture to pie pan size dish.

Combine oil, lemon juice, eggs, garlic and all spices and herbs in medium bowl. Mix thoroughly. Pour into pie pan depth dish. Add chicken to mixture and let marinate for at least 5 minutes on each side.

Remove chicken from marinade and dip into dry mixture coating chicken on both sides. Place chicken in baking dish. Add dry mixture to spots chicken might need.

Bake 30 minutes or until meat thermometer reaches 165 degrees F when inserted into chicken.
