French Lentil Salad

Introduction

Number of Servings: 4

Ingredients

    19-oz can lentils, drained and rinsed
    2 tbsps olive oil
    2 tbsps balsamic vinegar
    1/2 to 1 tsp Dijon mustard
    2 crushed garlic cloves
    1/4 tsp each of leaf thyme, salt and pepper
    10 chopped green onions, whites only
    12-oz can kernel corn, drained
    1 medium sweet red pepper, chopped

Directions

1. Drain lentils. Rinse with cold water and drain well.
2. Meanwhile, whisk oil with vinegar, 1/2 tsp Dijon, garlic and seasonings in a medium-sized bowl.
3. Taste and add more Dijon, if you wish.
4. Stir in lentils, onion, corn and red pepper.

Serving Size: Makes 4 1-cup servings.
