Chicken Meatball Casserole

Introduction

Creamy and cheesy Creamy and cheesy
Number of Servings: 4

Ingredients

    1 lb ground chicken
    1/4 cup diced onion
    1 can 98% fat free cream of chicken soup
    1 can peas and carrots
    1 cup skim milk
    1 cup instant rice
    1 cup shredded cheese made with 2% milk



Directions

Preheat oven 350
Roll ground chicken into1 inch meat ball and cook in a nonstick skillet for 5 minutes
add onions and cook 5 more minutes
add soup and milk
when blended, add peas and carrots
Mix in rice and put into casserole dish
Bake for 30 minutes
remove from oven and add cheese
Let stand for 2 minutes (until cheese is melted)
