Spinach Turkey Roll (gluten free)

Ingredients

1 lb. lean ground turkey
1 c. Corn Chex ground (Do mine in small blender like magic bullet)
1/4 C. milled flax seed
1 Egg (I use smart balance for omega 3s & such)
Onion Flakes
Italian Seasoning
Cumin
Cinnamon
Garlic Powder
Fresh grated ginger
2 or 3 oz. of feta cheese
1 to 2 cups frozen spinach thawed and dried or fresh spinach if available
Tips
Directions
Combine all ingredients except spinach and feta. The spices l listed were the ones I used. Feel free to add seasonings to taste and the ones you like. On a piece of parchment paper, spread meat combo out into a fairly long, narrow strip. Spread spinach and feta cheese on turkey roll and then use parchment paper to help roll the turkey.
Bake for about 1 hour in a 400 to 425 degree oven.
