Ingredients

    1/4 cup Olive Oil
    3 Tbsp White Wind Vinegar
    2 tbsp chopped Shallots
    2 tbsp fresh Oregano
    1 tsp Lemon Peel
    1 tbsp Lemon Juice
    1/2 tsp Salt
    1 clove Garlic minced
    1 lb Shrimp, cooked
    4 oz Provolone Cheese cubed (or you can use 1 cup crumbled Feta Cheese
    1 1/2 cups grape Tomatoes
    1/2 cup Capers drained

Directions

In a large resealabvle plastic bag combine oil, vinegar, shallot, ortegano. lemon peel. lemon juice, salt and garlice. Seal bag, mix marinade well. Set bag in large bowl; add shrimp, cheese, tomatoes and capers. Seal bag and marinate in refrigerator 2 to 6 hours, turning bag occassionally. Chill serving dishes before serving.
