Banana Muffins

Introduction

Number of Servings: 12

Ingredients

    1 1/4 C whole wheat flour
    1/2 C white sugar
    1/3 C quick oats
    1/8 tsp salt
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp ground cinnamon
    2 T. ground flax
    1/4 tsp nutmeg
    2 egg whites
    1 C banana, mashed
    1/4 C applesauce, unsweetened
    1 tsp vanilla
    1-5oz container greek fat free vanilla yogurt
    1/4 cup chopped walnuts

Directions

Preheat oven to 350. Line muffin tin with cupcake liners and spray with non-stick cooking spray so that liners do not stick to muffins. Sift together dry ingredients. In a small bowl, mix together egg whites, mashed banana, applesauce, yogurt and vanilla. Add to dry ingredients along with walnuts, stirring just until blended. Pour mixture into lined muffin tin and bake for 22 minutes.

Serving Size: makes 12 cupcake sized muffins
