Turkey Cupcakes with Red Sauce "Frosting"

Ingredients

1.25 pounds Ground Turkey Breast
1 cup Quick Cooking Oats
1 whole egg
.5 cup Parmesan cheese (reserve a bit to sprinkle on top)
1 small onion, grated
3 cloves garlic, minced or pressed
1 sprig fresh thyme
1 tsp ground sage
salt and pepper to taste
You can make your own "Frosting" with any kind of red sauce. For my recipe I use Muir Glen Organic Pizza sauce. I just spoon on about 1 tbs to each "Cupcake" and then sprinkle on a bit more parmesan. I ended up using about 1/3 of the can of sauce which I estimate to be about 3/4 cup.

Mix all ingredients together (except sauce) in a large bowl. Use your hands to incorporate everything but don't over mix. Roll into balls about the size of a racquetball. Spray 9 spaces in a cupcake pan with canola oil spray or line with papers. Top each "Cupcake" with about 1 tbsp of red sauce and sprinkle on a bit of cheese.
Bake at 375 for about 40 minutes or until internal temp is at 170.
Serving Size: Makes 9 "Cupcake" sized servings
