Blending Machine Chicken Tortilla Soup

Ingredients

2 Chicken Thighs, boneless, skinless and precooked
1oz. Garden of Eden Tortilla Chips (about 11 chips)
1/4C. Trader Joe's Low Sodium Corn
1/4C. Black Beans
1 Medium Tomato (roma size)
1/2 Avocado
2 Cloves Garlic
1T. Shallot
1 Carrot
1 Scallion
1 Celery Stick
1 Mini Bell Pepper
1/2 Jalepeno Pepper, seaded
1/2 Key Lime including rind
Dash Tobasco
1t. Taco Seasoning
3C. Low Sodium Chicken Broth
Tips
I start with a salad, then have a bowl of the hearty soup.
Directions
This is best made in a high-powered blending machine such as a Vitamix. All items are raw, except for the black beans and chicken.
Pre-cook chicken (I use leftovers)
Cook the black beans in advance or use can beans (rinsed). I prefer fresh beans as there is less sodium.
Add all ingredients except the beans, corn, chips and chicken to the blender. Blend on high for 30-60 seconds.
Cut each thigh into four pieces. Add chicken pieces, mix for a few seconds.
Add beans and corn, pulse three times.
Add chips, pulse once.
