Maple Creme burlee

A very rich creamy dessert, which is easy to make, and is great for any special occasion. A very rich creamy dessert, which is easy to make, and is great for any special occasion.
Number of Servings: 4


    5 egg yolks
    6 tbsp of sugar (which is 1/3 of a cup)
    2 cups of 2% milk
    6 tbsp of real maple syrup
    1 tsp vanilla flavouring


Garnish: with fresh berries, or mixed fruit.
When picking a garnish aim for low sugar, low fat options!

scald milk and vanilla on stove, meanwhile mix yolks sugar and maple syrup together in a a bowl. WHen milk is almost boiling, you will see a scum layer almost its ready. Pour into yolk mixture, quickly and steadily, whisking quickly or your eggs will curdle.

When mixed together well, pour into your ramekins and remove the foam from the top of each dish. And set them in a water bath, with water half way up the side of the dish. Becareful not to get water in the creme because it will not set up!

Bake uncovered, for 30-40 mins. or until the liquid seems set in the dishes with just a hint of a wiggling movement in the middle.

Before eating add 1 tbsp of sugar to the top and pass under a broiler, or use a blow torch to melt the sugar.

Keeps in fridge up to 9 days, but I recommend eating them within a week.
