Tuna Penne Casserole

Ingredients

    1 Tbsp cornstarch
    3 Tbsp water
    1 1/3 C dried penne or macoroni
    Vegatable oil spray
    1 tsp canola or corn oil
    1/4 C chopped onion
    1 1/2 C 1/2% milk
    1 tsp dried parsley flakes or 1 Tbsp fresh parsley
    1/2 to 1 tsp curry powder
    1/4 tsp salt
    1/8 tsp pepper
    6-oz Bumble Bee very low sodium albacore tuna, in water
    1/2 drained no salt-added diced tomatoes

Directions

In small bowl, mix cornstarch with water, whisk and set aside.

Cook pasta according to directions.

Lightly spray large nonstick skillet with vegetable oil spray. Heat over medium high heat. Add oil and swirl to coat the bottom. Cook inion for 2 to 3 minutes, or until soft.

Whisk milk, parlsey, curry powder, salt and papper into the onion. When mixture is hot, gently shisk in cornstarch mixture. Continue to whisk gently for 3 - 5 minutes, or until slightly thickend. Remove from heat.

Stir in tuna, pasta and tomatoes.

Serving Size: makes 5 1-cup servings
