Bread Pudding

Introduction

I bake this bread pudding in two 5 1/2" ramekins for a big dessert for 2, but you could bake it in one 8x8 pan, or even bread pans. I like to top it with whipped cream (calories not included). I bake this bread pudding in two 5 1/2" ramekins for a big dessert for 2, but you could bake it in one 8x8 pan, or even bread pans. I like to top it with whipped cream (calories not included).

Ingredients

    3 pieces Pepperidge Farm Cinnamon Swirl bread
    2 eggs (I use Egglands Best large eggs)
    1/3 cup liquid egg whites (or 2 egg whites)
    1 cup milk (I use 2%)
    1 T. margarine, melted
    2 T. sugar
    cinnamon to taste


Directions

Preheat oven to 350 degrees.
Bake bread into small pieces, divide evenly between 2 ramekins (if using).
Divide and drizzle margarine over bread.
Beat eggs, egg whites, milk, sugar and cinnamon with wire whisk until well blended.
Divide and pour over bread. Let sit 30 minutes so the bread can soak up the mixture.
Bake 30-35 minutes or until top springs back when lightly tapped.
Let cool. Put in the fridge or eat it while it's warm!
