Introduction

This is a delicious stew that my husband makes for me! You can vary the herbs and spices according to your taste. It's very versatile and tastes great. It's even better the second day! Number of Servings: 8

Ingredients

    2 medium onions, chopped
    4 cloves garlic, minced
    3 medium carrots, chopped
    2 medium zucchini, chopped
    3 cups chopped sweet potato
    2 medium stalks celery, chopped
    2 chicken or beef bouillon cubes
    2 tbsp olive oil
    2 cans whole tomatoes
    1 can peas
    1/2 cup chopped fresh basil
    1/4 cup chopped fresh oregano
    4 cups water

Directions

Heat oil in large pot and lightly saute' onions and garlic. Add tomatoes and water, bouillon cubes, carrots, celery, and sweet potatoes.
Bring to a boil, reduce heat and simmer for about 10 minutes.
Then add zucchini, peas and chopped fresh herbs.
Cook for an additional 5 minutes or until all the veggies are done to your liking.
This is very thick - more like stew than soup.
You can add canned or fresh fish, pinto beans, chickpeas, grated parmesan etc. if you want to increase the protein values.
