Introduction

my first attempt at this dish... not too shabby my first attempt at this dish... not too shabby
Number of Servings: 4

Ingredients

    1/2 a medium eggplant - sliced (in rounds) about 1\4 inch thick

    1/2 cup flour

    garlic powder, oregano, pepper, onion powder - to taste

    1/2 cup spaghetti sauce

    1/2 cup shredded cheddar cheese


Tips

Really good with a bit of ranch


Directions

Preheat oven to 400F

Slice eggplant and soak in water

Mix flour & seasonings in a bowl

coat slices, one at a time, with flour mixture & place on a non-stick baking pan

Bake for 10 minutes

Remove from oven and spoon about 1 tbsp spaghetti sauce over each slice

Bake for another 5-7 mins

Turn oven to BROIL -HI

Top slices with shredded cheese

Broil 2-3 mins to melt & slightly crisp cheese

Serving Size: 4 servings, 4 slices per serving
