King Crab & Quinoa Salad

Ingredients

    3 Oz. Alaskan King Crab Meat - Chopped
    1/4 Cup Dry Quinoa - Cooked
    1 Cup Of Tomatoes - Chopped
    1 Bell Pepper - Chopped
    1/4 Cup Cucumber - Chopped
    1 Tbsp. Cilantro
    1 Tbsp. Parsley
    1/2 Tsp. Cayenne Pepper
    1/4 Med. Jalapeno Pepper - Chopped

Directions

Prepare Quinoa then let cool before mixing all ingredients in a medium size bowl.

Can be enjoyed by itself or placed on a bed of salad greens for a great meal.

Makes 2 1-cup servings.
