Chicken, zuchinni, peppers

Introduction

A quick dish that can be served over whole grain pasta as well (not factored in to nutritional counts) A quick dish that can be served over whole grain pasta as well (not factored in to nutritional counts)
Number of Servings: 6

Ingredients

    1 medium zucchini - sliced
    1 medium bell pepper (any color) - sliced
    1/2 large onion, chopped
    1 can of diced tomatoes (I prefer the Italian style)
    1 package of Trader joe's Roasted Garlic Chicken Sausage (5 total sausages)

Directions

Chop all veggies and saute with a splash of extra virgin olive oil. While veggies are sauteing, frying the sausage in a separate pan. When veggies are cooked to your liking (I like mine a little softer), combine veggies with sausage and add the can of tomatoes. Cook until all are thoroughly heated, then enjoy!
