Taco Soup

Introduction

Number of Servings: 8

Ingredients

    1 pound lean ground beef
    1 small onion
    3 cups water
    15 oz. can tomato sauce
    1 pkg. ranch dressing
    1 pkg. taco seasoning
    1 bag frozen corn

    Optional: either 1 small can of diced tomato with juice or 1 small can of diced tomato with hot peppers to give it a kick.

    Can also add 2 cans of beans (your choice)
    kidney, white, black

    can also add 1 can green chilli's

    Corn chips or Doritto's on top of serving
    and shredded cheese; place soup in bowl, top with corn chips and shredded cheese place in microwave for 45 seconds to let cheese melt and enjoy.

Directions

In Dutch Oven cook ground meat until pink is removed over low heat. Make a well in middle and saute onions until translucent. Pour off any excess fat.

Add ingredients in order given:

3 cups water
15 oz. can tomato sauce
14 oz can diced tomato with green chilli's
1 pkg. ranch dressing (dried)
1 pkg. taco seasoning (dried)
1 bag of frozen corn

Stir ingredients together and let it heat up to a soft boil; allowed to cook for at least 30 mins on low heat.

If you add 2 cans of beans the soup now becomes more of a stew. As delicious as the soup with more fiber.

Use a handful of corn chips or Doritto's on top of soup and some shredded cheddar cheese on top of Chips.

Note: This is not a low fat meal but is full of fiber and a great comfort food on a very cold day.

Serves: 6 to 8

  • I used canned tomatoes instead of sauce, added ranch style beans, hominy & black beans -my favorite. Also can top with cheese and sour cream & green onions. Homestyle biscuits with garlic butter and cheese go well with this also. - 1/26/08
