Veggies to the Maxx

Number of Servings: 5

Ingredients

    2. tbsp olive oil
    spices
    6 oz. - 8 oz. of chicken, cut into strips
    2 zucchinis, sliced
    3 c. mushrooms, sliced
    1 onion (any kind) I use sweet or white generally, cut into pieces
    2 cloves garlic
    2 yellow or orange bell peppers, cut into pieces
    2 oz. feta cheese (optional)

Directions

Put one tbsp of olive oil in the bottom of the pan to keep the indgredients from sticking. Heat the oil and garlic and put the cut up pieces of chicken in the pan. Add spices. (Any kind you prefer, I generally use no salt like Mrs. Dash, or garlic powder, feel free to mix and match!) Once the outsides are cooked, at all of the veggies, if you like a lot of flavor add more spices. Add the other tbsp of olive oil. Mix around in the pan on medium high heat. Make sure chicken is cooked through. Plate the meal and top with feta cheese if desired.

Serving Size: makes 5 good size servings
